Job Profile Summary:
The Cook has responsibility for meal preparation and assigned kitchen duties in a professional kitchen, with exposure to potential hazards including kitchen equipment, extreme heat, various food items. Prepares food items in accordance with recipes and brand standards while maintaining a neat, clean and safe work environment. Visually inspects all foods sent from kitchen to make sure plates are clean and appetizing. This position may involve serving duties at times. Primary job duties include food prep, dishwashing, and inventory management. Serving will require food production, delivery and table service. This job requires ability to perform the following: carrying or lifting items weighing up to 25 pounds, standing up and moving about in the kitchen, handling food objects, products and utensils, bending, stooping and kneeling. An alcohol awareness certification and/or food service permit or valid health/food handler cards may be required by local or state government agency.
Essential Responsibilities and Duties include the following - Other Duties May Be Assigned:
- Adhere to Platinum Management Services, LLC. and Brand specific standards.
- Adhere to statutory requirements applicable to food and drink service (i.e. ServSafe Food Handler Permit, Server Permit).
- Comply with all applicable federal, state and local laws and ordinances as they apply to the property, guests and departmental personnel.
- Adhere to safety and emergency procedures and policies (i.e. evacuation, first aid, etc.) to include removing all safety hazards.
- Notify management immediately of all incidents and injuries.
- Maintain thorough knowledge of hotel information including but not limited to menu items, packages, promotions, local area, attractions and events.
- Greet guests’ promptly and courteously to ensure exceptional guest satisfaction.
- Effectively communicate with management to prepare and submit purchase requests and ensure adequate inventory, based on forecasted business volume and budgeted revenue and profitability goals.
- Maintain inventory log continuously throughout the shift. Record any variances i.e. breakage and spoilage accurately.
- Prepare and cook food according to recipes, quality standards, presentation standards and food preparation checklists.
- Reads and employs math skills to follow recipes; supplies assigned work station with all needed products and culinary equipment for prompt production.
- Operate ovens, stoves, grills, and microwaves and fryers ensuring proper working order at all times.
- Take, monitor and prepare orders via POS.
- Assist food and beverage department in the preparation of all items for all outlets and meeting events.
- Coordinate catering reservations and Food preparation with Sales Department and assure guest satisfaction.
- Follow up on menu items and cost any special menu requests.
- Maintain a clean and hazard free work area. Practice clean as you go procedures.
- Clean, sanitize and store all equipment, utensils and service ware according to local ordinances, Company and Brand standards.
- Keep company business including but not limited to, financials, personnel, guest and customer data strictly confidential.
Qualifications & Requirements:
- A food service permit or valid health/ food handler card(s) and / or an alcohol awareness certification may be required in accordance with state and local government agencies, Company and Brand standards.
- Professional appearance and grooming must be adhered to at all times. Uniforms must be worn according to Company and Brand standards.
- Excellent verbal and communication skills required.
- Possess technical knowledge and aptitude. MICROS experience preferred.
- Must have knowledge of safe food handling, presentation and serving methods.
- Ability to attend and complete job and Brand training.
- Ability to work a flexible schedule.
- Be a self-starter.
- Be organized and work well in a fast paced team environment.
- Stand for an extended period of time or for an entire work shift.
- Move, lift, carry, push, pull, and place object weighing less than or equal to 25 pounds without assistance.
- Reach overhead and below the knees, including bending, twisting, pulling and stooping.
- Ability to perform duties within extreme temperature ranges.
- 1 year experience required.
- High School Diploma or equivalent.
